Aflatoxine is de meest bekende mycotoxine en wordt geproduceerd door de schimmels Aspergillus flavus en Aparasiticus. Hiervan zijn de vormen aflatoxine B1, B2, G1 en G2 van belang. Aflatoxine wordt standaard geanalyseerd in diervoeders, aardnoten, noten, gedroogde vruchten, granen (en afgeleide producten daarvan), mais, rauwe melk, specerijen en kruiden, zuigelingen voeding.
